Recipe: Cake Batter Pudding Cookies.


The name alone had me interesting, so I had to try these cake batter pudding cookies. I pretty much followed the recipe, but left out salt and used salted butter. I also used 2 tablespoons of vanilla to give it a bit more flavor. But these are incredible! I can’t stop eating them…they are soft sugary cookies that taste almost like pudding filled. Delicious!

Cake Batter Pudding Cookies

1 1/2 sticks butter
3/4 cup brown sugar
1/4 cup sugar
1 (3.5 oz) package vanilla instant pudding
3/4 cup yellow cake mix
2 eggs
2 tablespoons vanilla (I increased this for extra flavor)
1 teaspoon baking soda
2 1/4 cups flour
sprinkles (optional)

Preheat oven to 350 degrees. In large mixing bowl combine sugars and butter. Add pudding and cake mix. Add eggs and vanilla. Finally combine flour and baking soda. Hand stir in optional sprinkles. Roll cookies into 1 inch balls and cook on greased cookie sheet for 10-12 minutes.
